NOTES:
- All SC fonts save one (Songti SC Black) now have full TC analogs.
- There is a new Chinese font, bringing the total number added since Mountain Lion to eleven.
Fonts
You will find three Chinese fonts in the /System/Library/Fonts folder. PingFang.ttc is the Chinese system font in Sierra. STHeiti Light.ttc and STHeiti Medium.ttc are the old system fonts. One font is installed in the /Library/Fonts folder, Songti.ttc.
Hanzipen Tc Regular Face Mask
The remaining Chinese fonts are all stored in the /System/Library/Assets/com_apple_MobileAsset_Font3 folder. They are not installed by default, so they are greyed out in Font Book. They are downloaded and installed when you activate a Chinese input source, or you can use Font Book to download and install them.

In addition, Apple provides a set of two fonts designed to coordinate with a Japanese font, Hiragino Sans: Hiragino Sans GB and Hiragino Sans CNS, each in two weights.
Apple also maintains a set of old Chinese Language Kit and Mac OS 9 fonts, for backward-compatibility reasons:
